Why anesthesiologists care about your stomach

General anesthesia and deep sedation switch off the airway's protective reflexes. If the stomach holds food or liquid, that content can travel up and be inhaled — pulmonary aspiration — a rare but serious complication that fasting rules exist to prevent: the familiar "nothing after midnight" is aspiration prophylaxis, engineered around normal gastric emptying times.
